Noodle broth...

I made a wee noodle broth for ma dinner tonight- yum yum... You need: -spring onions -fresh chilli -2 cloves garlic -2cm of ginger -1 stick lemongrass -mushrooms -1 veg stock cube -200g sugarsnap peas -some pak choi -soy sauce -noodles Put the spiring onions, some olive oil, chilli, garlic and ginger in a pan and cook fo a wee bit. Then add the mushrooms and lemongrass.
Pour in 800ml of water and the veggie stock cube, chuck in the sugarsnap peas and bring to the boil.
Add pak choi, soy sauce (to taste) and the noodles. Add a wee bit o salt and pepper too if yer up for it.
Et voila...

The walk home and veggie fajitas...

On my walk home the other night I took this wee snap from the Pitlochry dam. There are so many nice places to go for a wee walk to clear you head... We've started doing a wee come dine with me thing with a couple of other girls from the theatre. Myself and Alison joined forces for our one as I couldn't really have people over to my place. We went for veggie fajitas, salad and cheesecake- yum yum....

Adventures of a veggie haggis...

So its Burns night and there isn't much supply of veggie haggis around ol' Sulivan County so I decided to make my own. Thanks to this recipe-

Ingredients:
1 small onion, diced
2 tablespoons oil
1 carrot, grated
1 cup mushroom, sliced
3/4 cup red lentil
2 cups vegetable stock
1 cup kidney bean
3/4 cup mixed nut, ground
2 tablespoons soy sauce
1 tablespoon lemon juice
1 teaspoon fresh rosemary
1 pinch cayenne
salt, to taste
black pepper, to taste
3 cups quick oats
1/2 cup scotch
1/2 cup water

Do this:
1 Saute the onions, carrot and mushrooms until tender.
2 Add the red lentils and stock. Bring to a boil.
3 Add the kidney beans, nuts, spices, soy sauce, and lemon juice. Bring to a boil again.
4 Simmer 10 minutes, covered.
5 Sit in oatmeal, Scotch, and water.
6 Preheat the oven to 375 degrees. Oil 8 ramekins or muffin pan (18 muffins) or a loaf pan.
7 Fill ramekins, muffin pan, or loaf pan. Cover with foil.
8 Bake for 30 minutes (longer for a loaf pan). Remove the foil and bake 5 more minutes, uncovered.
